Akki roti is a traditional flatbread dish from Karnataka. ‘Akki’ in Kannada means rice. Akki roti or akki rotti is made of rice flour. It is absolutely delicious and very easy to make. It is also healthy as it uses very little oil or salt. It can be prepared using ingredients that are present in most kitchens.

There are many regional varieties of akki roti recipe. Some use vegetables like capsicum and cucumber in their recipe. However, they all have a few ingredients in common; green chilli, jeera, grated coconut and rice flour. While this akki roti recipe calls for onions, carrots and a few other greens, they are optional.

Traditionally, the dough is kneaded into the shape of the akki roti on a banana leaf as it was easily available. However, in this recipe, we have other alternatives for you to use as well.

List Of Ingredients

Here are the ingredients you’ll be needing for the akki Roti recipe –

  • 1 and 1/2 cups rice flour
  • 1/2 cup finely chopped onions
  • 1/2 cup grated carrot
  • 1/3rd cup chopped coriander
  • 1/2 cup chopped dill leaves (optional)
  • 1/3rd cup fresh grated coconut
  • 1 and 1/2 teaspoons ginger (chopped or grated)
  • 3 green chilis
  • 1 teaspoon jeera (cumin seeds)
  • 1 tablespoon oil (or according to taste)
  • 1/2 cup water (or as required)
  • Salt according to taste
  • Single banana leaf (butter paper or newspaper or foil also works)

How To Make Dough For Akki Roti

To make a delicious akki roti as per the akki Roti recipe, you’ll have to –

  1. Take a sufficiently large mixing bowl or vessel for preparing the dough. In it add the chopped onions, carrot, coriander and dill leaves. While dill leaves add to the flavour, they are optional.
  2. Chop the 3 green chilis (or fewer, the spice can be adjusted according to preference) and add them to the mixing bowl.
  3. Add 1 and 1/2 teaspoons of ginger to the bowl as well.
  4. Next, add the jeera and the coconut. The fresher the coconut, the better the roti tastes.
  5. Add one and a half cups of rice flour.
  6. Finally, add salt according to taste and mix well.
  7. Set the dough aside for a minimum of 20 minutes. As it rests, the moisture released from the vegetables will mix with the rice flour.
  8. Next, add water to the flour to bind everything into a dough. Be careful while adding water, add in small amounts. Mix with your hands and knead the dough lightly into a moist ball. It should be soft and should take shape easily.

How To Cook The Roti

  1. For kneading the dough into the shape of the roti, you will need a smooth, lightly oiled surface. A banana leaf is ideal but you can use some greased foil or butter paper for this.
  2. Take a small portion from the dough and gently flatten it into a circular shape on the banana leaf or foil using only your hands. Don’t let it be too thick.
  3. Lift up the roti using the leaf and gently put it on a lightly oiled tawa or pan. Peel off the leaf from the roti. You can skip this step and knead the dough into the roti directly on the pan or tawa. However, make sure the tawa is cool when doing this. It’s best to start heating the tawa only after the akki roti is placed on it so that it doesn’t stick to its surface. If you follow this technique, you will need to cool the tawa before making each roti.
  4. Start cooking the roti on a low to medium flame.
  5. Once the akki roti starts to turn golden and crispy, flip it over and cook the other side as well. Drizzle a few drops of oil on this side. Take it off the gas once cooked and serve hot!

Akki roti recipe tastes best when served with onion or coconut chutney, but other side dishes like pudina chutney or pickle also work well. Rice flour is the main ingredient in this recipe. Good quality rice flour is crucial to achieving the right texture and flavour of the akki roti.

A trick to make sure your dough turns out soft and moist is to sieve the rice flour before mixing it with the other ingredients.
