Ingredients

  • A cup of organic red poha
  • Four tablespoons of oil (2+2)
  • A teaspoon of mustard seeds
  • 10-12 curry leaves
  • Two tablespoons of groundnuts
  • One medium-sized onion, coarsely chopped
  • One small potato, cubed
  • Two green chillies, slit
  • Half a teaspoon of turmeric
  • A teaspoon of sugar
  • Salt, as per taste
  • A wedge of lemon
  • A tablespoon of fresh coriander leaves, chopped

Procedure

  1. Wash and soak the poha in lukewarm water for about 2-3 minutes. Drain the water and let the red poha sit in the colander for about 15 minutes.
  2. In the meantime, heat two tablespoons of oil in a pan.
  3. Now add the potatoes and saute them until they turn light golden-brown. You may add a pinch of salt to quicken the process. Once the potatoes look done, take them out of the pan.
  4. Add the groundnuts to the hot pan and saute them in oil until they are toasted. Keep aside.
  5. Add the remaining two tablespoons of oil to the pan and add the mustard seeds to it. Allow it to splutter.
  6. Drop in the curry leaves and followed by the onions. Saute until the onions turn translucent. Add the green chillies and give everything a good mix.
  7. Now, add the potatoes, peanuts, turmeric, and salt and fry them together.
  8. Finally, add the poha and mix everything thoroughly.
  9. Allow it to cook for a minute or two on low heat. Sprinkle the sugar on top and squeeze the juice of the lemon.
  10. Give it a final stir, and serve with a garnishing of coriander leaves.
