Method of preparation

Cook a cup of red rice with three cups of water and three cups of coconut milk in an open pan. Once the red rice absorbs all the liquid, stir in a cup of milk, half a cup of brown sugar, and vanilla. Stir all the contents and bring the coconut milk to a simmer. Let it cook for about 20 to 30 minutes until the pudding turns creamy. Add half a cup of fresh cream to make this pudding richer. Turn off the heat, sprinkle some rose water and some cardamom powder, cover it up and allow it to rest. Method of preparation

Pressure cook a cup of soaked red rice until it turns soft and mushy. Use a masher to grant it a creamy texture. Add half a cup of powdered jaggery and 4-5 tablespoons of water to the mashed rice. Combine everything and bring it to a simmer. Stir in a cup of milk/coconut milk and mix everything until you get a creamy texture, let this mixture cook for nearly 5-7 minutes until you get the desired consistency. Sprinkle a teaspoon of cardamom powder over the top and let it sit for some time.

Meanwhile, heat up a tablespoon of ghee in a tadka pan. Roast some cashew nuts and pieces of copra in the ghee. Pour this tempering over the payasam and cover it with a lid. After resting it for 2-3 minutes, give everything a good stir. The ghee should get incorporated within the payasam. Garnish with crushed pistachio and a few strands of saffron, and serve hot.
