Sweet besan recipe #1: Besan laddu

Ingredients

  • 2 cups gram flour (coarse)
  • 6-8 cashew nuts
  • 6-8 almonds
  • 1/2 cup ghee
  • 1/2 tsp green cardamom powder
  • 1/3 cup sugar
  • Saffron (optional)

Method

  1. Take a heavy-bottomed pan and add ghee. When the ghee melts, add besan and roast it on low heat. Constantly stir the besan to avoid burning.
  2. Keep stirring to break the lumps of besan.
  3. After around 10 minutes, the flour will become light and fluffy. Continue roasting on low heat for another 10 to 15 minutes or until the flour changes colour to a light golden brown.
  4. You will notice that the ghee starts separating from the besan. At this stage, turn off the heat and transfer the besan into a bowl.
  5. Let it cool for around 15 minutes or until it is lukewarm. Then add saffron, cardamom, nutmeg, and dry fruits.
  6. Add powdered sugar and mix well.
  7. Massage ghee on your hands and take 2 to 3 tablespoons of the mixture in your hands and shape it to form round balls.
  8. Store laddus in an airtight container or refrigerate to increase its shelf life.

Sweet besan recipes #2: Besan ka halwa

Ingredients

  • ½ cup ghee/clarified butter
  • 1½ cup besan/gram flour
  • 2 tbsp rava/semolina/suji, fine
  • 2 cup milk
  • ½ a cup of sugar
  • 2 tbsp saffron milk
  • 2 tbsp cashew/kaju, chopped
  • ¼ tsp cardamom powder

Method

  1. Take a kadhai and add ½ cup ghee. Once the ghee melts, add 1½ cup besan along with 2 tbsp rava.
  2. If you have coarse besan, then adding rava is optional.
  3. Roast on low heat while continuously stirring the mixture. Roast for at least 25-30 minutes or until besan changes its colour to a golden brown.
  4. Then add 2 cups of milk and stir well.
  5. Keep stirring continuously until all the milk is absorbed and there are no lumps.
  6. Cook this mixture until it separates from the pan.
  7. Add ½ cup sugar and 2 tbsp saffron milk.
  8. Mix the ingredients well until the sugar dissolves completely and separates the pan.
  9. Add 2 tbsp cashew and ¼ tsp cardamom powder.
  10. Turn the heat off and transfer the mixture. Enjoy the halwa hot and garnish it with more cashews.
