FOUR DELICIOUS DISHES TO TRY THIS HARVEST SEASON

The harvest season is here and so is the time to celebrate Lohri, Sankranti, Bihu, and Pongal. Here are four delicious dishes that will surely make you welcome the onset of Spring on a delicious note.

1. Til Gajak:

Heat 1 Tbsp ghee in a non-stick pan and saute coarsely powdered dry roasted sesame seeds (1 cup) till golden brown. Now add 200 gms condensed milk and cook till the mixture thickens. Immediately spread it across a greased tray and cut it into pieces after it cools down.

2. Coconut Chikkis:

Give your regular chikki a coconut twist. In two separate pans, dry roast 2 cups of grated dried coconut and 1/4th cup poppy seeds till golden. In a pan, melt ¼ cup gur (jaggery). Add 1 cup powdered sugar and cook till it caramelizes. Now add half of the coconut preparation, 1 tsp cardamom powder and all of the poppy seeds and mix well. Add the remaining grated coconut and cook for a minute. Put this mixture in silicon muffin moulds (filling only 2 cm of each mould). Allow it to set in the fridge for one hour.

3. Vada:

Vada is definitely the go-to dish to give your festivities a southern swing. Make a fine paste of 1 cup split urad dal that has been soaked for 6 hours. To this, add 1 tsp salt and 1/4th tsp hing and pepper. Whisk till the batter becomes fluffy. Add 1 tbsp chopped coriander leaves, 1 tsp finely chopped ginger and ½ tsp of finely chopped green chilies to the batter and mix well. Now make flattened round dumplings of the batter with a hole in the center. Deep fry the vadas in oil till they turn golden brown.

4. Chakli:

Your festivities are certainly incomplete without this snack. With the help of water, knead the following into a dough – 1 cup rice flour, 1/4 cup urad dal (powdered), 1 ½ tbsp salt, ¼ tbsp finely powdered hing, 2 tbsp ghee, 1 tsp each of red chili powder, carom seeds and sesame seeds. Set aside the dough for 1 hour. Heat oil in a wok for deep frying. With a seviyan press, press out the dough into round chaklis or murukus. Lower the flame and cook till they turn light brown on both the sides.
