Healthy and Tasty Pudina Rice Recipe Enriched with Herbs

We Indians are obsessed with rice. We can have it for breakfast, lunch and dinner with dal, curry, curd, chutney or just rice cooked well with vegetables. There are so many recipes of rice, which are very different in taste: Biryani, Khichdi, Pulao, Steamed Rice, Jeera Rice, Veg fried rice, egg fried rice, schezwan rice and what not. But for the summers let’s try a pudina rice/mint rice/ pudina pulao recipe that is infused with herbs and seasonal vegetables. 

Pudina rice is easy to cook, rich in micro and macronutrients. It is good for a filling meal for the summers especially when served with raita. So what’s not to like? Wait! Did we mention it is simply mouthwatering and an amazing recipe that can be prepared in very less time?

A perfect recipe for a dinner with friends and family during the summers. Now let’s learn how to make this pudina pulao recipe. 

Pudina Rice Recipe

This pudina rice is enriched with seasonal vegetables, paneer and can be served with curd, raita, and chutney. It takes almost 25 minutes to make this pulao. 5 mins are required for preparation and 20 mins for cooking. With the amount mentioned, you can approx. serve three people. For serving more people you can increase the quantity of ingredients proportionately. 

Ingredients

For Masala

  • Handful pudina
  • Handful coriander
  • 3 cloves garlic
  • 1 inch ginger
  • 2 chilli
  • ¼ onion
  • 2 tbsp coconut (grated)
  • 1 star anise
  • 2 pod cardamom
  • 5 cloves / lavang
  • ½ inch cinnamon
  • ½ tsp pepper

For Pulao

  • 2 tbsp ghee 
  • 1 tsp cumin 
  • 1 bay leaf
  • 10 cashew 
  • 1 sliced onion 
  • 1 chopped tomato 
  • ½ potato 
  • ½ capsicum
  • ½ carrot
  • 2 tbsp peas 
  • 100 gms of cottage cheese
  • 2 cup water
  • 1 tsp salt
  • 1 cup basmati rice (soaked 20 minutes)

Method of Preparation

  • Take a handful of mint and coriander, add 3 cloves garlic, 1 inch ginger, 2 chilli, ¼ onion and 2 tbsp coconut  in a small blender. 
  • Also put 1 star anise, 2 pods of cardamom, 5 cloves, ½ inch cinnamon and ½ tsp pepper and blend them to smooth paste adding water as required.
  • Keep it aside. 
  • Heat 2 tbsp ghee in a pressure cooker and saute 1 tsp cumin and 1 bay leaf until it turns aromatic.
  • Further add 10 cashews and roast until it turns golden brown.
  • Now add 1 onion and saute well.
  • Also, add 1 tomato and saute until it turns soft and mushy.
  • Then add ½ potato, ½ capsicum, ½ carrot, 2 tbsp peas and cottage cheese cubes and saute until it turns aromatic.
  • Add the masala paste we prepared in the beginning and saute well.
  • Pour 2 cup water, add 1 tsp salt, add 1 cup basmati rice and mix well.
  • Cover and pressure cook for 2 whistles. 
  • Serve the pudina rice fresh with chutney/curd/raita.
