  • A cup of dried red chillies
  • A cup of hot water
  • A quarter cup of sesame oil
  • Two tablespoons of minced garlic
  • A tablespoon of grated ginger
  • 8-10 fresh peppercorn (or Sichuan peppercorn), pounded
  • One small onion, finely chopped
  • A tablespoon of soy sauce
  • A tablespoon of rice vinegar
  • Salt as per taste

Procedure:

  1. Soak the red chillies in hot water for a minimum of 30 minutes. Then blend it into a fine paste.
  2. Heat the sesame oil in a wok. Add the ginger and garlic, and fry them for about two minutes.
  3. Add the onions and saute them until they turn translucent.
  4. Stir in the red chilli paste and sprinkle in the salt and pepper. Saute everything for about two minutes. Adjust water to maintain consistency. Keep stirring until the water evaporates.

  6. Adjust the spices and continue cooking for about a minute or two.

First, you will need:

  • 10-12 Kashmiri dried red chillies
  • A cup of rice vinegar
  • Two teaspoons of freshly grated ginger
  • A teaspoon of minced garlic
  • A cup of sugar
  • Two teaspoons of tomato ketchup
  • Two teaspoons of cornflour (made into a slurry)
  • A cup of water

Procedure:

  1. Coarsely grind the Kashmiri red chillies. You may even hand pound it.
  2. Bring the water and vinegar to a boil in a heavy-bottomed saucepan. Once it reaches a roiling boil, stir in the sugar, ginger, garlic, red chillies, and ketchup.
  3. Let it simmer for about 5-6 minutes.
  4. Prepare a cornflour slurry and stir it into the red chilli sauce while whisking it constantly.
  5. Take the saucepan off the heat and allow the sauce to cool.
  6. Transfer into an airtight container.
