What You Need

  • Whole wheat flour – 2 cups (atta)
  • Salt – as needed
  • Water – as needed
  • Vegetable oil – for both kneading the dough and frying the paratha
  • Ajwain – 1 tablespoon

How to Make

  • In a large bowl, add the flour along with a pinch of salt, 2 teaspoons of oil, and mix well.
  • Now pour water slowly and begin to knead the dough. Make sure the dough is smooth. When done, cover it with a muslin cloth and keep the bowl aside for about 20 minutes.
  • After that, cut it using a knife into small balls. Take one ball in hand, press it a little in the middle, and add some ajwain and sprinkle with salt.
  • Now, fold the ball and roll it like a paratha.
  • Place a tawa or griddle on medium flame and brush with some oil. When the oil is hot, put the rolled paratha and let it cook till it turns golden brown.
  • Now flip the paratha and pour some oil to fry that side similarly. When done, take it out from the tawa and serve hot along with a bowl of curd or pickle.

Ajwain Paratha with Methi and Chilies

Ingredients for the ajwain paratha

  • Whole wheat flour – 1 cup
  • Fenugreek leaves (methi) – ½ cup
  • Ajwain – ¼ teaspoon
  • Salt – as per taste
  • Green chillies – 2 , chopped
  • Oil – 1 teaspoon and 2 tablespoon
  • Water – as required
  • Curd – 2 tablespoon
  • Garlic – 1 teaspoon, grated

Preparation

  • Take a bowl and add the wheat flour, salt, grated garlic, chopped green chillies, chopped methi leaves, curd, and ajwain and mix well.
  • Now pour small amount of water and knead the dough. Keep adding the water as and when required so that the dough gets perfect texture.
  • When the dough is ready, pour 1 teaspoon of oil and knead again. Cover it with a wet cloth and do not touch it for about 20 minutes.
  • After that, divide it into 7-8 small balls. And start rolling them one by one using a rolling pin and some loose flour.
  • Place a tawa on high flame and once it becomes hot, place a rolled out paratha on it and toast it a little on both sides.
  • When done, brush both sides with oil and toast it for a few minutes more so that both the sides get crispy and golden.
  • It tastes yummy with raita or mixed pickle.

To make this paratha extra nutritious, replace the whole wheat flour, and use either oats or chickpea flour or millet flour.
