Vegan Falafel burgers

A healthy delicious burger that is filling yet low on calories to satisfy your soul and belly. 

Ingredients

  • 400g organic boiled chickpeas, rinsed and drained
  • 1 tsp ground coriander
  • 200g tub tomato salsa, to serve
  • green salad, to serve
  • ½ tsp harissa paste or chilli powder
  • 1 garlic clove, chopped
  • handful of flat-leaf parsley or curly parsley
  • 1 tsp ground cumin
  • 2 tbsp sunflower oil
  • 2 tbsp plain flour
  • 1 small red onion, roughly chopped
  • toasted pitta bread, to serve

Method of Preparation 

  • Drain the chickpeas and pat them dry with kitchen paper. 
  • Put the chickpeas in the food processor. Add onion, garlic, cumin, coriander, parsley, harissa paste, flour and a little salt as well. 
  • Blend the mix until it is  fairly smooth. 
  • Then shape them into four patties with your hands.
  • Heat the sunflower oil in a non-stick frying pan, and fry the fritters for 3 mins on each side until lightly golden. 
  • Serve with the toasted pitta bread, tomato salsa, some green salad and a little bit of love. 

Vegan Pulled Meat Substitute (Made from Jackfruit)

Another easy vegan recipe to try is a meat substitute made from jackfruit. It can be stuffed into bread rolls or it can be eaten standalone as well. 

Ingredients

  • 1 tbsp vegetable oil
  • 1 red onion, finely chopped
  • 1 tsp ground cinnamon powder
  • 1 tsp cumin seeds
  • 2 tsp smoked paprika
  • 2 tsp chipotle Tabasco
  • 1 tbsp apple cider vinegar
  • 4 tbsp BBQ sauce
  • 200g chopped tomato
  • 2 x 400g young Jackfruit in salted water

Method of Preparation 

  • Heat the vegetable oil in a frying pan and cook the onion until very soft and translucent for like 10-12 mins. 
  • Add the cinnamon, cumin and paprika and cook further for 2-3 mins. 
  • Add tabasco, vinegar and bbq sauce and mix well before adding in the tomato, the drained jackfruit and 200ml water. 
  • Keep it covered and simmer gently for 30 mins, stirring every 5-10 mins to help break down the jackfruit. 
  • Then take the lid off and cook for another 10 minutes.
  • Once well cooked, use a fork to make sure all of the jackfruit is well shredded.  
  • Add seasoning and another tbsp of bbq sauce if necessary for extra stickiness. Serve with love. 

Chocolate Chia Pudding

Another easy vegan recipe to cheer you up is a delicious vegan dessert. Let’s see the recipe. 

Ingredients

  • 60g chia seeds
  • 400ml unsweetened almond milk or hazelnut milk
  • ½ tsp vanilla extract
  • cacao nibs, mixed
  • 3 tbsp cacao powder
  • 2 tbsp maple syrup
  • frozen berries, to serve

Method of Preparation

  • Put all the ingredients in a large bowl with a pinch of sea salt and whisk to combine. 
  • Cover with cling film then leave it for thickening in the refrigerator overnight.
  • Spoon the pudding into four glasses, then top with the frozen berries and cacao nibs.
  • Serve with sweetness of your love
