Ingredients
- rajma – 3/4 cup
- water – as needed
- ginger – 1 teaspoon, cut into julienne pieces
- green chilli – 1
- salt – as per taste
- ghee – 3 tablespoon
- ginger and garlic paste – 2 teaspoons
- tomatoes – 2, medium-sized, finely chopped
- onion – 1, large, chopped finely
- cream – 2 tablespoon
- coriander leaves – freshly chopped, 2 tablespoon
- turmeric powder – 1/4 teaspoon
- red chilli powder – 1/2 teaspoon
- garam masala powder – 1 teaspoon
- coriander powder – 1 teaspoon
- kasuri methi – 3/4 teaspoon
- cumin seeds – 1/2 teaspoon
- bay leaf – 1 small
How to make chitkabra rajma ki sabji
- First of all, take a bowl of water and add the rajma to it and let it soak overnight. Next day, wash them in fresh water and cook them in a pressure cooker till they become tender.
- Now add the chopped onions and tomatoes in the blender and make a fine paste of them.
- Place a wok on high heat and add the ghee followed by the cumin seeds and bay leaf.
- As soon as the seeds start to crackle, reduce the flame and add the ginger-garlic paste and cook till their raw smell vanishes.
- Now transfer the onion and tomato paste from the blender to the wok and cook well.
- Next, add turmeric powder, red chilli powder, coriander powder and garam masala powder and mix well.
- When the spices start to leave oil, transfer the boiled rajma from the cooker to the wok and mix with the spices.
- Place a lid on the wok and allow the rajma to cook for 15 minutes. You can smash some of the rajma to make the gravy thicker.
- When done, add the chopped coriander leaves, kasuri methi and the fresh cream and mix with the rajma.
- Give it a standing time of 5 minutes and then serve with white rice.
