Yoghurt: 3 cups
Gram flour: 1 cup
Turmeric: 1 tsp
Chilli powder: 1 tsp
Salt: As required
Garam masala: 1 tsp
Water: 6 cups
Oil: ¼ cup
Asafoetida: ½ tsp
Cumin seeds: 2 tsp
Red chillies: 5 – 6, whole

For tempering:
Butter: 1 tbsp
Chilli powder: 1 tsp
For pakora:
Gram flour: 1 cup
Salt: 1 tsp.
Oil: ½ cup
How to prepare a besan curry recipe?
- In a bowl, collect and mix the chickpea flour, chilli powder, turmeric, garam masala and salt.
- Once mixed thoroughly, add some yoghurt so that it forms a smooth consistency. To smoothen the paste further, add some water.
- Take a large pan and heat some oil in it. Once crackling, add some asafoetida, whole red chillies and cumin seeds to the oil.
- Wait for the cumin seeds to start sputtering and once that happens, add flour and yoghurt mixture to the oil. Allow the mixture to come to a boil on medium heat.
- Once it comes to a boil, lower the heat and allow the mixture to thicken a bit.
- Now, you can start preparing the pakora which will be added to the besan curry recipe.
- In a bowl, collect the gram flour, salt and oil together and combine them to form a smooth paste by adding some water. The consistency should be thick and such that it drops. Allow the batter to rest for at least 15 minutes before proceeding.
- Next, take a frying pan and heat some oil in it.
- Collect the mixture prepared to make the pakora and beat it very well until it becomes light and fluffy in terms of consistency.
- Slowly, pick teaspoons full of the mixture and add them to the oil once it is hot enough. Allow the pakora to fry enough until they are fluffy enough, and they change their colour to a golden brown shade.
- Once done, pull the pakora’s out of the oil and add them to a curry prepared earlier.
- In a serving bowl, garnish the besan curry with clarified butter and chilli powder.
