5 Health Benefits Of Saunf Milk
Are you tired of fretting about your weight while indulging in sweet treats? Well, the secret to guilt-free sweet indulgence lies in tweaking recipes to make them healthier. If you can justify the nutritional value of the food, you can be carefree while relishing its many flavours. In the spirit of this idea, we have red rice sweet recipes that are loaded with antioxidants, minerals, proteins, and fibres.
So without further ado, let’s take a look at two delicious but simple red rice sweet recipes.
This is one of the red rice sweet recipes that truly assimilate and capture the subtle flavours and textures of South Asian cuisine. The nuttiness of red rice complements the delicateness of coconut milk. Garnishing it with tropical fruits, such as ripe mangoes, offers contrasting flavours of sweet against tartiness.
Cook a cup of red rice with three cups of water and three cups of coconut milk in an open pan. Once the red rice absorbs all the liquid, stir in a cup of milk, half a cup of brown sugar, and vanilla. Stir all the contents and bring the coconut milk to a simmer. Let it cook for about 20 to 30 minutes until the pudding turns creamy. Add half a cup of fresh cream to make this pudding richer. Turn off the heat, sprinkle some rose water and some cardamom powder, cover it up and allow it to rest. After 10 minutes, you can serve the pudding hot or let it cool in the refrigerator for 2-4 hours. Garnish with ripe mangoes while serving the pudding.
Chemba rice, or Kerala Matta rice, is a variety of red rice that is extremely popular in South India. This is one of the many lost red rice sweet recipes that have seen a revival in the past few years. The richness of ghee makes this red rice sweet a truly desi recipe.
Pressure cook a cup of soaked red rice until it turns soft and mushy. Use a masher to grant it a creamy texture. Add half a cup of powdered jaggery and 4-5 tablespoons of water to the mashed rice. Combine everything and bring it to a simmer. Stir in a cup of milk/coconut milk and mix everything until you get a creamy texture, let this mixture cook for nearly 5-7 minutes until you get the desired consistency. Sprinkle a teaspoon of cardamom powder over the top and let it sit for some time.
Meanwhile, heat up a tablespoon of ghee in a tadka pan. Roast some cashew nuts and pieces of copra in the ghee. Pour this tempering over the payasam and cover it with a lid. After resting it for 2-3 minutes, give everything a good stir. The ghee should get incorporated within the payasam. Garnish with crushed pistachio and a few strands of saffron, and serve hot.
The two red rice sweet recipes, as cited above, are the gateway to guilt-free dessert binges. While red rice does add a dash of healthiness, you can take it up by a few more notches by choosing organic ingredients. Organic products, such as red rice, sugar, etc., are more nutritionally dense. And just like that, you will make the healthy red rice sweet recipes even healthier!
