Methi Aloo Recipe According To Dhaba Style

Ingredients
Potatoes – 3, medium, cut into cubes
Fenugreek leaves or methi – 250 gm
Red – 1, dry
Lime juice – 1 teaspoon
Salt – as per taste
Cumin powder – 1 teaspoon
Coriander powder – 1 teaspoon
Red chilli powder – 1/2 teaspoon
Turmeric powder – 1 teaspoon
Asafoetida – a pinch
Cooking oil – 2 tablespoon
Ghee – 1 tablespoon
Garlic – 8 cloves, finely chopped
Onion – 1, medium size, finely chopped
Green chilli- 1, finely chopped
Cumin seeds – 1/2 teaspoon
How To Make
Cut the methi leaves from the stem and wash thoroughly under running water. Leave them aside.
Place a wok on high flame and add the oil along with ghee. As it becomes hot, reduce the flame to medium and add the cumin seeds, dry red chilli and asafoetida and stir for a few seconds and add the chopped garlic.
Fry for about a minute till the garlic turns brown and leaves a nice aroma.
Next, add the chopped onion along with chopped green chillies and sauté them till the onions become translucent.
Add the cubed potatoes followed by salt, turmeric powder and red chilli powder and stir well. Put a lid on the wok to let the potatoes cook for about 2 minutes.
After that, sprinkle cumin and coriander powder. Mix with the potatoes and cover again so that the potato cubes can be cooked well.
When they are mostly cooked, add the methi leaves and mix with the potatoes. Pour lime juice and mix with the veggies and switch off the flame.
Serve hot with rice or roti or paratha.
