Dry Urad Dal Recipe Ingredients

Punjabi dry Urad dal recipe is relatively simple. Since the recipe is dry, it is suggested that you prepare dry Urad dal with a spicy tempering, else the final dish may taste bland. The dry nature of the dish also pushes the dish more on the lines of a dry curry, rather than a conventional lentil dish.

Moving forward, we will be performing two parallel preparations. One for preparing the Urad dal and the other for the tempering. Below are the ingredients required for preparing the Urad dal.

  • 250g organic Urad dal (Preferably of the unsplit variety)
  • 1 cup of water
  • Salt to taste
  • Pinch of asafetida (Hing)
  • ¼ teaspoon turmeric powder

 

Now that we are done with the Urad dal preparation, let’s have a look at the list of ingredients for the tempering (tadka).

  • 2 tablespoon ghee/oil
  • 2-3 chopped green chillies
  • ½ teaspoon cumin seeds (Jeera)
  • 2 medium-sized chopped onions
  • 200g finely chopped tomato
  • Red chilli powder to taste, preferably ½ teaspoon
  • 1 teaspoon coriander powder
  • ½ garam masala
  • ½ inch finely chopped ginger
  • 1-2 tablespoon lemon juice
  • 2-3 leaves of green coriander, finely chopped
  • Salt to taste

As you can see, the ingredient requirements for Punjabi sukhi Urad dal recipe are not too expansive, and most of the required ingredients can be easily found in a majority of Indian kitchens. Now let’s begin with the preparation of our sukhi Urad dal recipe.

So, the first thing that we need to do is to prepare the Urad dal. Let’s begin with the steps.

  • Wash the dal thoroughly in fresh water and let it soak for around 25-30 minutes. It is essential to soak the dal as it helps it in maintaining its consistency during the cooking process.
  • Once the dal is soaked, rinse it again with fresh water. This helps the dal in maintaining its texture, and it does not turn pasty.
  • Put the dal in a pressure cooker along with the turmeric powder, salt, asafetida, and 1 cup of water and let it cook till two pressure whistles.
  • Switch off the flame and allow the pressure to get released naturally.

 

Now let’s start our tempering (tadka) preparation.

  • Heat 2 tablespoons of ghee/oil in a pan and let it heat.
  • Put the cumin seeds with chopped green chillies and ginger.
  • It will take around 10-15 seconds for the chilli and ginger to be cooked, and once this is done, put the onions in the pan.
  • Cook the mixture for 2-3 minutes on a medium flame till the onions start getting a golden texture.
  • Now, add the chopped tomatoes and cook till the tomatoes start oozing out their pulp.
  • Add the red chilli powder, coriander powder, salt, garam masala powder, and cook everything on a medium flame for 2-3 minutes.
  • Now, open the pressure cooker and put the cooked dal in the tempering. If there is still water left in the cooker, cook the dal for a few more minutes in an open vessel and let the water evaporate.
  • Mix the dal well with the tempering to ensure that the flavours are mixed consistently.
  • Take out the preparation in a bowl and garnish with a dash of lime. Your Dhaba style Punjabi dry Urad dal is ready!
