Akki roti
Made with mixed vegetables and rice flour, akki roti is very popular as a breakfast item in all over Karnataka. You need 15 minutes to prepare all the things, while the cooking will take about half an hour. So, without further ado, let us start with the ingredients.
Ingredients
Onions – 1/2 cup, finely cut
Carrots – 1/2 cup, grated
Coriander leaves – 1/3 cup, chopped
Rice flours – 2 cups
Dill leaves – 1/3 cups, chopped
Ginger – 1.5 teaspoon, grated
Green chillies – 3, chopped
Salt and oil – as required
Cumin seeds – 1 teaspoon
Coconut – 1/3 cup, grated
Water – as needed
Butter paper – 1, medium (you can use 1 medium banana leaf as well)
How to make
Take a big bowl and add the chopped coriander and dill followed by onions, ginger, green chillies, carrots and grated coconut. Mix well.
Now add the rice flour and cumin seeds to the bowl, sprinkle some salt and mix well. When done, put a lid on the bowl and put it to rest for half an hour.
After that, add water as required and knead a soft dough.
Take out a small part of the dough and place it on the butter paper or banana leaf. Keep pressing the ball so that it becomes flat and looks like a roti.
Refrain from making it too thick or thin.
Place a tawa on medium flame and as soon as it becomes hot, add a little bit of oil and transfer the roti gently into it.
Cook it well from both side by adding a bit of oil on the other side too so that no sides remain raw.
You can have it hot with green chutney or curd or pickle.
