Ingredients that you need:
4 to 5 russet potatoes, skinned and cut into fries
Oil, for deep frying

So, for the first coating, you require:
Three tablespoons of all-purpose flour
Three tablespoons of cornflour
A teaspoon of garlic paste
A teaspoon of red chilli paste
Two teaspoons of chilli powder
Two teaspoons of salt
And here is what you need for the second coating:
Three tablespoons of all-purpose flour
Three tablespoons of cornflour
A quarter of a teaspoon of black pepper powder
Two tablespoons of water
Let’s get some crispy potato fries! Here’s how:
Wash the potato slices in running water and let them soak in ice water. In this way, you are removing all the excess starch and making the potato sticks firm.
Turn on the deep frier or allow the oil to heat up in a wok.
Combine all the ingredients of the first coating and sprinkle the mix over the fries. Gently massage them over the potato fries until everything is coated.
Once the oil is hot, deep-fry the potato fries until they are semi-cooked, take them out of the oil and let it cool in a tissue-lined tray.

Ingredients that you need:
Two tablespoons of sesame oil
A tablespoon of finely minced garlic
A teaspoon of red chilli flakes
Three tablespoons of white sesame
A teaspoon of rice wine or apple cider vinegar
A teaspoon of soy sauce
Two tablespoons of tomato ketchup
Three tablespoons of honey
A teaspoon of red chilli paste
A teaspoon of cornflour
A quarter cup of water
Here’s how you make the sauce:
Heat the oil in a pan or a wok, stir in the garlic and saute it for a couple of minutes. Keep the flame on high.
Now, add the chilli flakes and sesame seeds. Toast them for a bit to get a deep, intense flavour.
Pour in the ketchup, red chilli paste, soy sauce, vinegar, and honey and give it a good stir.
Meanwhile, combine the water and the cornflour to make a thickening slurry. Add it to the wok and stir everything until you get a consistent sauce.
Turn down the heat to medium or medium-low.
Use a wire whisk to stir the sauce and prevent it from burning as it thickens. The sauce must be runny enough to coat the fries but not too runny as to make them soggy.

Ingredients that you need:
Crispy potato fries
Honey chilli sauce
Spring onion greens, finely chopped
White sesame seeds, toasted
The final bit requires you to act quickly while the sauce is hot! Do this:
Just when the sauce is ready, turn the flame down and toss in the crispy potato fries.
