  • 20 pieces of dry red chillies (whole) – adjust it as per your tolerance or use a blend of varying red chillies, for instance, Kashmiri Mirch with Byadagi chillies
  • One small onion, finely chopped
  • 15 cloves of garlic, peeled and finely chopped
  • An inch of ginger, peeled and grated
  • A tablespoon of white vinegar or apple cider vinegar
  • A teaspoon of organic brown sugar
  • Half a teaspoon of black pepper powder
  • Half a teaspoon of soy sauce
  • Four tablespoons of sesame or vegetable oil
  • Salt as per taste
  • Water for soaking the chillies and for thinning out the sauce

Here are the steps for how to make red chilli sauce in its red hot fiery avatar:

  1. Start by removing the red chilli stalks and soaking it in hot water for at least half an hour. Once the red chillies soften, blend it in a mixer grinder to achieve a coarse texture.
  2. Heat the oil in a pan and saute the ginger and garlic until they turn fragrant. Keep stirring them to ensure that they cook evenly. However, do not make them brown.
  3. Add the onions and saute cook them until it turns translucent.
  4. Now, stir in the red chilli paste. Saute everything together until the oil starts leaving around the sides.
  5. Add half a cup of warm water and let the sauce simmer for a minute or two.
  6. Pour in the soy sauce and vinegar and sprinkle the salt, sugar, and black pepper powder.
  7. Cook it for another 5 to 6 minutes and adjust the flavours to your taste.

  • Two large tomatoes, quartered
  • Six cloves of garlic, peeled and chopped
  • Three tablespoons of organic sugar
  • Two tablespoons of tomato ketchup
  • 1/4th cup of white vinegar or apple cider vinegar
  • A tablespoon of oil
  • Salt as per taste

  1. Start by toasting your red chillies on high heat.
  2. Once they turn fragrant, transfer the chillies and garlic into a saucepan and pour in 500mL of water. Bring the water to a boil and allow it to simmer for about 15 minutes.
  3. Take the liquid off the heat and allow it to cool.
  4. In a food processor jar, add the chilli-garlic stock, tomatoes, vinegar, salt, sugar. Blend everything until you get a smooth mixture. Pass this sauce through a strainer.
  5. Pour the red chilli sauce in a clean saucepan and stir in the tomato ketchup. Allow it to cook for at least 5 to 7 minutes over a medium flame.
  6. Once you notice the sauce reducing and thickening, turn the flame off and allow it to cool. Make adjustments with the salt and sugar until you hit the perfect flavour.
  7. Pour this red chilli sauce in a sterilized glass bottle and store it in the refrigerator. It will hold for nearly 3 months.
