  • An inch of ginger, peeled and grated
  • A tablespoon of white vinegar or apple cider vinegar
  • A teaspoon of organic brown sugar
  • Half a teaspoon of black pepper powder
  • Half a teaspoon of soy sauce
  • Four tablespoons of sesame or vegetable oil
  • Salt as per taste
  • Water for soaking the chillies and for thinning out the sauce

Here are the steps for how to make red chilli sauce in its red hot fiery avatar:

  1. Start by removing the red chilli stalks and soaking it in hot water for at least half an hour. Once the red chillies soften, blend it in a mixer grinder to achieve a coarse texture.
  2. Heat the oil in a pan and saute the ginger and garlic until they turn fragrant. Keep stirring them to ensure that they cook evenly. However, do not make them brown.
  3. Add the onions and saute cook them until it turns translucent.

  • A tablespoon of oil

  1. Start by toasting your red chillies on high heat.
  2. Once they turn fragrant, transfer the chillies and garlic into a saucepan and pour in 500mL of water. Bring the water to a boil and allow it to simmer for about 15 minutes.

  4. In a food processor jar, add the chilli-garlic stock, tomatoes, vinegar, salt, sugar. Blend everything until you get a smooth mixture. Pass this sauce through a strainer.
