Thattai Crispy Snacks with Rice Flour – Speciality of South India
It is one of the popular rice flour recipes Indian snacks. Made with urad dal flour, some herbs, a pinch of salt and rice flour, these deep-fried snacks have originated from Tamil cuisine. Also popular as thattu vadai, these crispy snacks are must during the festivals. You can make them easily within half an hour and serve with a hot cup of tea!
To make these crispy snacks with rice flour, you need some basic ingredients.
Ural dal – 1 ½ tsp
Peanuts – 1 ½ tsp
Rice flour – 1 cup
Gram – 2 tbsp, either fried pr roasted
Butter – 1 tbsp
Sesame seeds – 1 tbsp
Asafoetida and red chilli powder – ¼ tsp each
Salt – as per taste
Chana dal – 1 tbsp
Curry leaves – 1 spring
Cooking oil – as needed
How to Make
Take the chana dal in a bowl and soak it for about 2 hours after washing thoroughly. After 2 hours discard the excess water.
In a pan, put the urad dal and peanuts and roast them for a few minutes without any oil. When done, remove the skin of the nuts.
Put the fried gram along with roasted urad dal and peanuts and grind them finely.
Take a large bowl and add the rice flour followed by chana dal, asafoetida, and red chilli powder, the powder mixture of the blender and sesame seeds. Mix them very well and add the chopped curry leaves and mix again. Remember, organic ingredients are even better for such dishes due to the lack of harmful chemical compounds.
Add the butter followed by little water. This way, you can make soft and smooth dough for Thattai. Refrain from making it extra moist as that will soak excess oil while frying, making the Thattai greasy.
On the other hand, the extra dry dough will make the Thattai crack. Taste the dough and if everything is fine, form 15 balls out of that dough.
Place a wok on medium flame and pour oil. While it is hot, take a greased sheet and put one ball on it. Press it with wet fingers to spread evenly. Do not make it too thin or thick.
Now carefully pick the Thattai from the sheet and place it in the hot oil. Once the side turns crunchy and golden, flip it over so that the other side gets the same texture.
This way, fry all the Thattai one by one. Once they cool down, you can keep them in an airtight jar for almost a fortnight.

Preparation
Take all the ingredients in a large bowl and add water gradually and start kneading the dough. The dough will be soft and smooth for making these crispy snacks with rice flour.
Now cut it into 4 parts. Take the chakli press and place one part of the dough and put the lid back. Now press it so that chakli swirls start to come out.
Once you complete making chakli swirls, place a wok on high heat and pour enough oil for deep frying. Once the oil becomes hot, reduce the flame to medium and add chaklis one by one and fry till they become crispy and golden brown.
