Whole Wheat Jaggery Cake Recipe Without Eggs

Ingredients
Whole wheat flour – 1.5 cups
baking powder – 1.5 teaspoon
baking soda – 1/2 teaspoon
Walnuts – 50 gm, chopped
Jaggery powder – 130 gm
Yoghurt – 120 gm
Oil – 120 ml
Cinnamon powder – 1/2 teaspoon
salt – a pinch
Vanilla extract – 1 teaspoon
Milk – 120 ml and 30 ml, separately
How to Make Whole Wheat Jaggery Cake
Start by preheating the oven at 350 degrees Fahrenheit.
Take an 8*4 inches rectangular cake pan and coat it with cooking spray.
Tip the jaggery powder in the strainer and sift it onto a large bowl to get rid of the larger particles. The fine powder will be deposited in the bowl.
Mix whole wheat along with baking soda, baking powder, salt and cinnamon powder in another big bowl.
Pour oil into it followed by yoghurt and vanilla extract and mix very well.
Add the fine jaggery powder and 120 ml milk to this whole wheat bowl and mix properly so that the cake batter forms well. If you see that the batter is very thick, pour the additional milk.
Mix the chopped walnuts with the batter and transfer it into the cake pan.
Insert the pan into the oven and let it bake for about 45 minutes. Insert a toothpick into it to check whether the cake is done properly or not. If it comes out without sticking, then your cake is ready.
Next, place the cake on the wire rack so that it cools down completely. Cut it as per your choice and feel the bliss into your mouth.
Some Pro-Tips
Refrain from cutting the cake when it is hot. As it is very soft, you might spoil the cake. So wait till it cools down completely.
If you don’t have walnuts, you can add any type of nuts, like almonds, cashews, hazel nuts. Addition of chocolate chips will make it tastier.
You can use any type of oil, though canola oil will be better.
