The poha cutlet is a fried patty that has poha as one of its major ingredients. It is a perfect party starter snack, and its crispy texture and taste are highly favoured by kids and adults alike.
Although there are many variations to the ever-loved cutlet recipe, the poha cutlet recipe is one of the easiest and tastiest to prepare. Poha has a moisture absorbing quality that makes the patties firm and also facilitates in maintaining a proper cutlet shape.

1 cup of organic poha (thick variety).
¾ cup boiled and mashed potatoes.
¼ cup finely chopped carrots.
¼ cup steamed green peas.
4-5 blanched French beans.
¼ cup finely chopped onion.
1 tablespoon finely chopped coriander leaves.
½ teaspoon ginger garlic paste.
¼ teaspoon turmeric powder.
¼ teaspoon red chilli powder.
¼ teaspoon garam masala powder.
½ teaspoon amchur (dry mango powder).
1 teaspoon sesame seeds.
Salt to taste.
Oil for shallow frying.

Poha Cutlet Recipe Preparation
If you have made other variations of cutlets in the past, you may understand the pain that it takes to form a perfect patty.
Not with the poha cutlet! The moisture-absorbing capability of poha helps in patties in retaining their shape and also ensures that they don’t break while frying.
Let’s begin with our poha cutlet recipe preparation.
Take 1 cup of organic poha and rinse it thoroughly.
Now, soak the poha in water for around 3-4 minutes.
Once the poha gets soft, strain the water and keep the poha aside for the later steps.
Boil 1 large potato in a pressure cooker until it is completely cooked and turns soft.
Now, peel the potato while it’s still hot and mash it thoroughly using your hands or a spoon.
Add the grated carrots, French beans, finely chopped onion, chopped coriander leaves, and ginger garlic paste.
Now, add the poha to the mix and mix everything thoroughly.
Once the mixture is ready, now add garam masala, amchur powder, turmeric powder, red chilli powder, sesame seeds, and salt to taste.
Mix everything thoroughly and taste the mixture to check if the spices and salt are sufficient.
We will now make the poha cutlet patties.
Our poha cutlet patties are ready and now we will begin with the frying process.
Take a flat-surfaced tawa and pour 3 tablespoons of oil on top of it and allow it to heat.
Once the oil is sufficiently hot, place the poha cutlet patties on the tawa and let it fry for a few minutes on a medium flame.
Flip the cutlets and check if the side is properly fried. A perfectly fried cutlet has a golden brown colour.
Continue flipping the patties in 1-2 minute duration so that the entire cutlet is cooked properly.
Once the cutlets have attained a golden brown colour and a crispy texture, remove them from the tawa.
Place the cutlets on paper napkins to remove the excess oil.
