  • 150g or 2 large or 3 medium tomatoes (tamatar)
  • 4 to 5 dry red chillies, whole (sukhi lal mirch)
  • 5 to 6 medium-sized cloves of garlic (lehsun)
  • An inch of ginger, peeled (adrak)
  • 1 Sichuan pepper (timer) – optional but highly recommended
  • A quarter of a teaspoon of black pepper powder (kali mirch powder)
  • Half a teaspoon of brown sugar
  • Salt as per taste
  • Three cups of water

Procedure
